I am testing a button that is initially defined with a two color linear gradient brush that appears horizontally. When the user hovers over the button, I would like to change the gradient to a two color appearing vertically and then revert back to default on mouseout. My first efforts have failed, so now I am attempting to replace the brush with a solid color brush to appear, however no animation is occurring.
Is it even possible to change gradient directions? If so, an example of how?
Regarding the solid color brush (in the code below)...why might this not be animating upon mouseover?

The color resources you defined are so similar that I was unable to visually detect any change at all. After I changed the Alpha (A) channel from 100 to 255 (fully opaque) and changed the colors to something with some contrast, the gradient color animation you have could be seen to work fine.
The following illustrates how to animate the gradient direction from horizontal to vertical.
The LinearGradientBrush can't be a target, but its properties can be bound. LinearGradientBrush.EndPoint is a point. So I put a Point in a dependency property somewhere, bind to that, and animate the point with PointAnimation.
You'll have to animate it back in the exit actions as well.

When a datagrid row is expanded to show the Row Details, is there a way to change the colour of the very left most portion, that inherits the colouring from the parent row?
i.e. this bit: Row Details
I managed to work it out. The "Main" border being used to colour the normal/alternating row cells, and then a second sub border that handles the events - in this case for Selected/MouseOver_Selected.
Note: The Cyan was because I was testing, it is not a colour scheme choice!!! :-P
EDIT:
I have added some additional code, and another Border - I am then using ControlTemplate.Triggers set on multi to preserve the alternating row colours on a standard mouseover, thereby bypassing the visual state mouseover event entirely.
The overall result is to preserves my alternating colouring at all times - except when the row is selected, at which point I am dictating the colouring for the selected row and the row details.

Changing these colors works for <Trigger Property="IsChecked" Value="True"> condition. But it's not working for IsMouseOver.
You're just missing the TargetName to tell it what object you're applying your setter changes to. So for example just take your;

and make it;
<Setter TargetName="ObjectNameToChangeStuff" Property="Background" Value="Gray" />
Where objectname is assumed to probably be a border or something so it would be something like

PS: this is a very naive approach, there's definitely a way to condense this down, I am a wpf beginner as well :P
I attempted to override the OnMouseOver event with no success. I agree with Yoghurt that making a template is the best solution. However instead of drawing the checkmark using Path I would recommend using a Unicode character. See wikipedia for different unicode characters. WPF may not support some of the newer unicode.

It won't work because of the default ControlTemplate on ComboBox. ComboBox consists of two parts, TextBox and Popup. The way you're doing it, it'll affect only the TextBox... but temporarily. So, if you mouseover the combobox, you'll notice that your background takes affect and then it disappears. That's because the default ControlTemplate has that animating behavior overriding your new background.
The easiest way to customize a ComboBox is to define a new template. You may find an example here (from MSDN):

but it does not work. Why?
The VisualStateManager.VisualStateGroups property should be attached to the root element in the Template which in this case is Border with the name "Background". Currently you have it on the Grid inside the border but the VisualStateManager won't find it.
Also your ButtonWithImage class must be derived from Button (unless you have your own code to call GoToState) but I suspect you have that already.

As you can see, I'm trying to databind the combobox's ItemsSource to Types, but this doesn't work. The list is in my ViewModel that is being applied to my page, how would I specify in this style that is in my resource dictionary that I want to bind to a source in my viewmodel.
I think the issue here is that the ControlTemplate will not inherit the DataContext of the control. You may be able to explicitly set the source of the binding using a RelativeSource or StaticResource.
Something like:
<ComboBox ItemsSource="{Binding Path=Types, Source={StaticResource myVM}}" ...
